Chef’s Special: this classic Italian pizza is named after the region of Puglia in Italy. In its simplest form, the basic pizza dough is topped with tomato sauce, mozzarella and red onion rings but Chef has added his own variations by adding more Italian cheeses, confit onions, olives with a sprinkling of fresh rocket.
